Holiday Spice Nog Scones

I've just returned from my four month study abroad adventure in Japan, and man, is it weird to be home! Between jetlag, holiday stress, unpacking, and general blues from leaving that magical country, I found myself needing a pick me up. Baking has always been my way to find my happy place, and I haven't had access to an oven for four months, so I decided to test my hand at making my first vegan recipe. I decided on something simple- scones. The carton of coconut milk holiday nog I'd just bought was staring me down from the fridge, add some of my favorite holiday spices, and these yummy treats were born :3

Holiday Spice Nog Scones
1 1/2 cups bread flour
3 tablespoons granulated sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup walnuts
1/4 cup cashews
Cinnamon, allspice, nutmeg, ginger
1/5 cup So Delicious Dairy Free Nog
1/4 cup water

Preheat oven to 425°, line a baking sheet with parchment paper. Stir together flour, sugar, salt, baking powder, and spices. Take a second to enjoy a whiff of this cause it should smell amazing. In a food procesor, pulse the walnuts and cashews until it resembles a rough flour. Add to flour mixture and stir until combined. Then pour in the nog and water, just barely incorporate with your hands. Take the sticky mess and plop it on a floured surface, knead it a little to shape it into a circle, then cut into 6 or 7 wedges. Put 'em on your baking sheet and stick in the oven for probably 15 minutes.

Play around with the spices as you like, I just sorta eyeballed it! Would've added cloves if I had any on hand but alas :c

These go really well with a nutty tea, I paired it with a chestnut, sweet potato, pumpkin tea I bought in Japan. Just the pick me up I needed (*˘︶˘*).。.:*♡
